Everyone's zucchini patches are producing faster than we can pick them, and we all need creative ways to use them instead of feeding the neighborhood. This fresh, simple salad comes to the rescue! It’s one of our favorite ways to enjoy raw zucchini straight from the garden.
This Fresh Zoodle Salad with Mint and Basil is perfect for hot summer days when the last thing you want to do is turn on the stove or eat a hot wedge of squash. It’s crisp, cool, and bursting with flavor, thanks to our farm-grown herbs and a generous drizzle of good olive oil.

🥗 Recipe: Garden-Fresh Zoodle Salad with Mint & Basil
Ingredients:
- 2 medium zucchini, spiralized (we use this spiralizer)
Don't have a spiralizer? You can julienne your zukes! Here's a tutorial on how to julienne zucchini from Smitten Kitchen. - 1/4 cup good olive oil
- Juice of 1 lemon
- 1 large garlic clove, pressed
- 2 tbsp chopped fresh mint
- 1 tbsp chopped basil
- Halved cherry tomatoes
- Herbed salt to taste (we use our Italian herb salt. DIVINE!)
- Black pepper to taste
- Optional toppings: crumbled goat cheese, pine nuts, or shaved Parmesan
Instructions:
- Spiralize your zucchini into noodles. If they seem watery, sprinkle lightly with salt and let sit for 10 minutes, then drain and lightly blot dry.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, fresh herbs, herbed salt, and pepper.
- Toss the dressing with your zoodles and herbs.
- Let sit in the fridge until it's time to eat and allow flavors to meld, then serve cold and enjoy!
🧺 Serving Tips:
This salad is delicious on its own, but also pairs beautifully with grilled chicken, pork, chickpeas, or a slice of crusty bread. It’s also a hit at potlucks and picnics!
